About this honey

Heather honey is the one people drive out to the honey house for. The colonies go up to Keld Top in the second week of August, when the moor turns purple, and come down in late September with whatever the weather has allowed.

It cannot be spun. Heather honey sets to a jelly in the cell, so every frame is cut out and pressed by hand, which is why the jar is 500 g rather than a pound and why it costs what it does. The tiny bubbles that make it look cloudy are part of it: they are the honey’s own structure, not a fault.

In a wet August there is none at all. When it sells out, it is gone until the next season.

“The heather honey is the only one my father says tastes like the hills he grew up on. It arrives set like a jelly, exactly as the note in the box said it would.”
