About this honey
Spring honey from rape and blossom sets fast and hard if it is left alone, so we seed it with a little of last year’s set honey and stir it cold for a week. The crystals stay fine and the result is white, smooth and spreadable.
It is the mildest thing we make, and the one to put in a lunchbox.
“The heather honey is the only one my father says tastes like the hills he grew up on. It arrives set like a jelly, exactly as the note in the box said it would.”
